Solar Evolution

Solar Evolution is our way of paying homage to one of our favorite sour beer breweries in the world, while combining the traditional brewing methods of Flanders Red and Berliner Weisse beers. We started with a wheat-based Flanders Red Ale recipe, then brewed as we do the rest of our Noble Star beers, with a no boil, mixed-culture fermentation. It was then aged with our strain of Brettanomyces Bruxellensis in one of our 80 year-old cypress wood lagering tanks for a year, similar to how our favorite Flanders Red is made. The result is a uniquely sweet and sour combination of malt complexity, bright lactic tartness, and refreshing drinkability.

Solar Evolution is unfiltered, hand-bottled, and bottle-conditioned to allow the flavors of the beer to continue to develop and evolve in the bottle. Enjoy lightly chilled in a tulip or pokal glass.
